6 lrg Onions - sliced
3 Tbsp. Dark muscavado sugar
2 Tbsp. Ginger preserve
2 Tbsp. Extra virgin olive oil
2 Tbsp. White wine vinegar
1 sm Glass of dry white wine vinegar
1/2 tsp Minced fresh sage
Direcciones
1 Soften the onion in oil - do not brown. Add in the wine vinegar, reduce for 25 min and stir in the preserve and sugar till dissolved and caramelised.
