.%20I%E2%80%99ve%20had%20serious%20flares%203%20times%20(meaning%20periods%20when%20I%E2%80%99ve%20been%20so%20ill%20I%E2%80%99ve%20been%20unable%20to%20work%20and%20merely%20%E2%80%9Cwaited%E2%80%9D%20out%20courses%20of%20antibiotics%20and%20immune%20building%20until%20my%20list%20of%20symptoms%20abated).%20During%20my%20%E2%80%9Crecessive%E2%80%9D%20periods,%20I%20still%20battle%20digestive%20issues,%20joint%20pain,%20feelings%20of%20paralysis%20on%20one%20side%20of%20my%20face,%20sleep%20problems%E2%80%A6%20symptoms%20that%20come%20and%20go%20and%20can%20be%20light%20or%20severe,%20depending%20on%20many%20factors.%3C/p%3E%3Cp%3ESince%20my%20last%20serious%20flare,%20which%20ended%20around%203%20years%20ago,%20I%E2%80%99ve%20had%20a%20good%20run.%3C/p%3E%3Cp%3EBut%20now%20things%20are%20changing%20again,%20I%20can%20feel%20it.%20And%20it%E2%80%99s%20scary.%20My%20body%20hurts,%20on%20a%20daily%20basis.%20Lights%20seem%20harsher,%20sounds%20seem%20louder,%20the%20world%20seems%20to%20be%20pulsing%20at%20a%20higher%20speed.%3C/p%3E%3Cp%3EI%20can%20feel%20my%20body%20screaming,%20%E2%80%9Cstop,%20pause,%20rest,%20be%20still%E2%80%9C.%20And%20I%E2%80%99m%20trying%20to%20slow%20it%20down.%20But%20when%20you%20have%20a%20day-job%20that%20pays%20so%20well%20you%20can%20actually%20see%20yourself%20clearing%20up%20that%20medical%20debt%20(I%E2%80%99m%20definitely%20pro%20Obamacare)%20and%20writing%20work%20that%20is%20soclose%20to%20being%20enough%20to%20sustain%20you%20financially,%20it%E2%80%99s%20hard%20to%20know%20what%20to%20give%20up.%20I%20work%20in%20a%20kitchen.%20I%20interview%20chefs%20for%20a%20weekly%20column.%20I%20review%20food%20events.%20I%E2%80%99ve%20got%20a%20crazy/awesome%20month%20of%20giveaways%20and%20features%20set%20for%20the%20Easy%20Eats%20blog.%20I%20go%20to%20CT%20to%20help%20out%20in%20my%20family%20office.%20I%20(attempt%20to)%20keep%20this%20blog%20going%20because%20I%20enjoy%20it.%20I%20love%20what%20I%20get%20to%20do.%20But%20once%20again%20I%E2%80%99m%20worried%20that%20my%20body%20can%E2%80%99t%20keep%20up%20with%20the%20%E2%80%9Cif%20you%20can%20make%20it%20there%E2%80%A6%E2%80%9D%20pace%20in%20the%20city%20I%20love%20so%20much.%3C/p%3E%3Cp%3EThis%20post%20may%20seem%20gratuitous%20the%20week%20of%20Thanksgiving,%20but%20it%E2%80%99s%20because%20of%20giving%20thanks%20and%20the%20joy%20of%20the%20holidays%20(that%20I%20adore%20and%20which%20give%20me%20so%20much%20inspiration)%20that%20I%20wanted%20to%20express%20this.%20This%20blog%20was%20inspired%20by%20my%20history%20with%20Lyme,%20but%20the%20past%20few%20years%20my%20symptoms%20have%20been%20a%20regular%20but%20manageable%20part%20of%20my%20life,%20so%20Lyme%E2%80%99s%20presence%20here%20has%20been%20relatively%20absent.%20Now%20it%E2%80%99s%20taking%20a%20bit%20more%20of%20my%20thoughts.%20I%20am%20so%20thankful%20for%20my%20health,%20especially%20for%20my%20ability%20to%20walk%20from%20A%20to%20B%20after%20not%20having%20been%20able%20to%20during%20my%20first%20bout%20as%20a%20child.%20But%20there%20are%20so%20many%20symptoms%20and%20ins-and-outs%20of%20living%20for%20so%20long%20with%20an%20intricate,%20changeable%20and%20painful%20illness.%20I%20want%20people%20to%20talk%20with%20about%20it.%20Because%20when%20we%20talk%20we%20process,%20and%20share%20ways%20to%20help,%20and%20ways%20to%20move%20forward.%3C/p%3E%3Cp%3EThis%20soup%20I%20made%20at%20work%20a%20few%20weeks%20ago,%20in%20love%20with%20the%20idea%20of%20making%20something%20simple%20and%20warming%20with%20only%20a%20few%20ingredients.%20It%E2%80%99s%20incredibly%20basic:%20yellow%20onions,%20chicken%20broth,%20garlic,%20thyme,%20garlic,%20salt%20and%20pepper.%20I%20love%20it.%20I%20made%20it%20at%20home%20again%20recently%20as%20it%20doesn%E2%80%99t%20threaten%20the%20stomach%20and%20got%20my%20body%20warm%20again,%20inside%20and%20out.%3C/p%3E%3Cp%3EStay%20warm,%20and%20thankful.%3C/p%3E%3Cp%3EThanks%20for%20reading,%3C/p%3E%3Cp%3E-%20Jacqueline%3C/p%3E%3Cp%3EOnion%20and%20Thyme%20Soup%3C/p%3E%3Cp%3EFeeds%204-6%3C/p%3E%3Cp%3EThe%20key%20to%20this%20soup%20is%20slicing%20the%20onions%20into%20thin%20strips%20and%20cooking%20them%20low%20and%20slow%20until%20they%20practically%20melt.%20Then%20just%20fill%20with%20broth%20and%20season%20with%20some%20fresh%20thyme%20and%20salt%20and%20pepper!%3C/p%3E%3Cp%3ECut%20the%20onions%20into%20quarters%20and%20then%20thinly%20slice.%3C/p%3E%3Cp%3EIn%20a%20large%20pot%20over%20medium%20heat,%20melt%20butter.%20Add%20onions%20and%20toss%20to%20coat.%20Add%20around%201%20tsp%20salt,%20garlic%20and%20thyme,%20a%20toss%20to%20coat.%20Reduce%20heat%20to%20low,%20cover,%20and%20let%20cook%20until%20soft%20(stirring%20occasionally),%20about%2030%20minutes%20or%20more,%20until%20they%20practically%20melt%20with%20pressure%20from%20a%20spatula.%3C/p%3E%3Cp%3EFill%20with%20broth%20until%20it%20just%20covers%20the%20onions.%20Bring%20up%20to%20a%20simmer%20and%20simmer%20around%2030%20minutes,%20until%20the%20onions%20have%20softened%20into%20the%20soup%20completely.%20Taste%20and%20season%20with%20salt,%20pepper%20and%20more%20thyme%20as%20desired.%3C/p%3E){kind=link}
