Onion Jam

Ingredientes

  • 2.2 lb (1 kg) onions
  • 5 tbsp (75 g) butter
  • 2/3 c. (150 g) powdered sugar
  • 7 tbsp (10 cl) Wine vinegar
  • 2 c. (50 cl) dry White wine
  • 1 tbsp coriander seed, grnd
  • Salt, pepper

Direcciones

  1. Peel and slice onions thinly
  2. Heat butter with sugar in casserole over low heat
  3. Add in onions, cover and cook for 20 to 30 minutes. Onions should be quite transparent and slightly caramelized
  4. Add in coriander, vinegar and white wine
  5. Add in salt and pepper to taste
  6. Cook for 30 minutes over low heat till all liquid has evaporated
  7. Place in jars and store in refrigerator
