Onion Ring Beer Batter

Ingredientes

  • 1/2 c. dark beer
  • 1/2 c. seltzer water or possibly club soda
  • 1 tbsp oil
  • 1 egg white
  • 1/2 tsp cayenne pepper
  • 1 tsp kosher or possibly sea salt
  • 1 c. Wondra or possibly pastry flour
  • 1/4 tsp mustard pwdr
  • 1/2 tsp onion pwdr

Direcciones

  1. Pour beer and seltzer water or possibly soda into the bowl of a blender or possibly food processor (or possibly a stick blender can be used). Sprinkle in pepper, mustard, salt and onion pwdr and oil. Pulse till combined. Add in flour last, and process only till mixed. Batter may still be slightly lumpy, but almost smooth. If too pasty, add in a tsp of water at a time till mix has the consistency of a pancake batter.Whisk egg white till frothy in a shallow bowl. Gently stir in contents of food processor, mixing till combined.
  2. Slice large sweet onions into rings. Separate rings. Soak in a small amount of lowfat milk for 10 min. Drain and lightly sprinkle with onion pwdr, then dip in batter.
  3. Fry small batches in hot oil (365F), turning once, gently to brown evenly. Remove using a slotted spoon and drain on paper towels before serving. Season with salt and pepper (a little hot salt or possibly cayenne, if you like) while still hot from fryer.
  4. Serve in paper baskets lined with paper towels. Great with batter-fried fish.
