Orange Cranberry Quick Bread

Ingredientes

  • 1/3 cup butter, melted
  • 1 cup sugar
  • 3 TBSP orange juice
  • 2 eggs
  • 1-1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1 cup fresh or frozen cranberries
  • 2 TBSP grated orange peel
  • GLAZE:
  • 2 TBSP orange juice
  • 1/4 cup sugar

Direcciones

  1. Spray an 8x4 inch loaf pan with cooking spray.
  2. Cut a strip of parchment paper and lay it over the bottom of the pan
  3. Spray cooking spray parchment paper
  4. In a large bowl, beat the butter, sugar, orange juice and eggs. Combine the flour, baking powder and salt; stir into egg mixture alternately with milk, beating well after each addition.
  5. Fold in the cranberries and orange peel.
  6. Transfer to the prepared loaf pan.
  7. Bake at 350° for 60-70 minutes or until a toothpick inserted near the center comes out clean.
  8. Cool for 10 minutes before removing from pan to a wire rack.
  9. Combine glaze ingredients.
  10. Drizzle over the warm bread.
  11. Cool completely
