Ingredientes

  • 16 ounce Packaged frzn flounder fillets
  •     Cut into 4 diagonally equal
  •     Portions, thawed
  • 1/2 c. Dry white wine
  • 1/2 c. Water
  • 1 Tbsp. Butter
  • 1 med Yellow onion, sliced in circlets
  • 1 x Garlic clove, halved
  • 1 1/2 ounce Dark rum
  • 1/2 c. Orange juice
  • 1/4 c. Orange marmalade
  • 1 c. Mandarin orange sections, (11 ounces) liquid removed

Direcciones

  1. In deep skillet, arrange fish. Cover fish with wine and water. Cover with lid and cook on medium heat till fish flakes easily with fork. Meanwhile, in second skillet, heat butter over medium heat. Add in garlic and onion.
  2. Saute/fry with skillet away from heat, add in dark rum, orange juice, marmalade and mandarin oranges. Return to heat. Add in fish into orange juice mix in skillet. Increase skillet to high heat and reduce liquid to 3/4 c.. To serve, arrange fish on platter. Pour sauce over fillets.
