Ingredientes

  • 1 pkt active dry yeast
  • 1/2 c. hot lowfat milk
  • 1/2 c. granulated sugar
  • 1 Tbsp. grated orange zest
  • 1 lrg egg lightly beaten
  • 1/4 c. hot water
  • 1/2 c. fresh orange juice
  • 1/2 c. ricotta cheese
  • 1/2 tsp salt
  • 1 c. minced walnuts-optional
  • 3 1/2 c. all purpose flour (3 1/2 to 4)
  • 1 lrg egg lightly beaten
  • 1 c. confectioners' sugar
  • 1 1/2 Tbsp. fresh orange juice (1 1/2 to 2)

Direcciones

  1. In a large bowl, dissolve yeast in hot water. Let stand till foamy, 5-10 minutes. Stir the hot lowfat milk, orange juice, sugar, ricotta cheese, orange zest, salt and egg into the yeast mix. Using heavy-duty electric mixer fitted with the paddle attachment and set on low speed, beat 2 c. flour into the yeast mix till a wet dough forms. Beat in the remaining flour, 1/2 c. at a time, till a stiff dough forms.
  2. Turn dough out onto a lightly floured surface and knead till smooth and elastic, 5 - 10 min, adding more flour as needed to prevent sticking. Place the dough in a large greased bowl, turning to coat. Cover loosely with a damp cloth and let rise in a hot place till doubled, about 1 1/2 hrs. Grease a 10 inch springform pan. Punch down the dough. Turn out onto a lightly floured surface and knead for 1 to 2 min. Divide the dough into 3 equal pcs. Roll each piece into a 20 inch long rope. Braid the ropes together. Coil braided dough in prepared pan; tuck ends under. Cover loosely with a damp cloth and let rise in a hot place till almost doubled, 30 min.
  3. Preheat oven to 425 deg.F. Brush the dough with glaze. Bake till the top of the cake is golden, 25 to 30 min. Turn the cake out onto a wire rack to cold slightly.
  4. To prepare icing, in a small bowl, stir together the confectioners' sugar and orange juice till smooth. Spread icing over hot cake and serve hot.
  5. Makes approx.
