Sauce ingredients. Grand Marnier and orange juice. Grand Marnier is expensive. This small bottle was almost $6.00.
Glaze ingredients: stone ground mustard, apricot jam, orange juice and brown sugar.
Use a 3 lb top pork loin roast to serve 6 people.
Mix glaze ingredients together while roast is cooking.
Baste with glaze during the last 15 minutes of roasting.
Insert slivers of garlic into slits all around the roast. Inject with injection liquid.
Roast to an internal temperature of 148^ or until juices run clear. About 80 minutes in my convection oven.
Tent cooked roast lightly with foil and let rest for at least 10 minutes while preparing pan sauce.
Deglaze roasting pan with sauce; scraping all fond from pan.
Reduce by about half. Remove from heat and strain. Mount final sauce with cold sweet butter.
Roast will be pink in the middle. Trichinosis is killed at 137^. The roast cooked to 148^ and rested which raised temperature by at least 5^ more.
