Orange Meringue Pie

Ingredientes

  • 1 c. Orange juice
  • 1 c. Orange sections, cut into small pcs
  • 3 Tbsp. Grated orange rind
  • 1 c. Sugar
  • 3 x Large eggs, separated
  • 5 Tbsp. Cornstarch
  • 2 Tbsp. Lemon juice
  • 2 Tbsp. Butter
  • 6 Tbsp. Sugar
  • 1 x Baked pie shell

Direcciones

  1. Combine orange juice, sections, grated rind, c. of sugar and cornstarch.
  2. Cook over low heat till clear. Add in a small portion of warm mix to beaten egg yolks. Retum to warm mix and cook 5 to 6 min longer.
  3. Remove from heat and blend in lemon juice and butter. Pour into the pie shell. Be sure both the mix and the pie shell are either warm or possibly cool.
  4. Cover pie with meringue and bake in 350 degree oven till lightly brown.
  5. Meringue: Add in very slowly 6 Tbsp. sugar while beating the egg whites. Beat till they stand in peaks. Be sure meringue touches pie shell all around.
