Misha and I were geographically separated, culturally distinct, ethnically different yet we were friends, we used to write to each other once in a while in our broken English, and we had never met in life, we were pen friends. Many moons ago in late eighties, we used to share our stories, fancies of a 12-year-old girl for whom places like Russia (then USSR) exist only in her geography textbook, through mail sealed in a red and blue striped air mails, the friendship continued till one year.

Welcome to the gen Z+1 the world of Fb and blogging through which I met Deboshree of Paneer and Pulao, who has a natural flair for writing and loved it all the more when it got spicer, she is truly a gifted writer. Writing comes naturally to her, and I love the way she plays with the words and weaved them beautifully to express her thoughts, she writes on almost anything that caught her attention, from over-smart kids to rain in Pune, love lost couples to kurta clad netas and the most amusing thing that I loved most is her rational and balanced approach which reflects through her impeccable writing. Someday I would love to read a book on short stories authored by her. (are you listening D ?)

Okay, now there are many wishes, not sure they are secret or not, as I keep telling people I want to do this or that - ” someday I would like to go for a Everest base camp trek, a classic walk along the world’s most famous mountain chain.”

Now, coming to the celebration part, Spring says “lets party” and in memory of those innocent moments and blogship aka friendship, let’s have this orange poppy-seed muffin with a zesty orange marmalade glaze.

Instructions

Preheat the oven to 400 F.

Lightly grease a 12 hole muffin pan or line it with paper cases.

Sift the flour into a bowl and add the baking powder, mix it well.

Stir the poppy seeds and sugar in the flour and make a well in the centre.

Put the butter and 2/3 cup orange marmalade in a small saucepan and stir over low heat until the butter has melted and the ingredients are combined.

Whisk together the milk, eggs and orange zest and pour in the well.

Add the butter and marmalade, fold with a metal spoon until just combined.

Divide the mixture evenly among the holes – fill each hole to about three-quarter full.

Bake for 20 – 25 minutes or until golden and skewer inserted into the centre comes out clean.

Heat the remaining marmalade and brush over the top of warm muffins.

Leave them to cool in the pan for couple of minutes before turning them out onto a wire rack.

Serve warm at room temperature.

Quick notes

Do not overmix the batter, it will be slightly lumpy. Muffins are best eaten on the day they are made, so if you want to store them, then let it cool completely and put them in ziplock or airtight bag.

Variations

You can replace orange with lime zest and can be glazed with lime marmalade.
