Orange Pound Cake is a childhood favorite of mine...a very old fashioned pound cake with all the goodness of fresh orange....drizzled with orange glaze.. is one of the best cake that my amma bakes. The cake is dense and so very citrusy, the natural orange flavor makes it very special.

When amma was visiting me, she made this cake to surprise me when I dozed off in the afternoon after having a lavish lunch prepared by her, and woke up to the aroma of freshly baked cake .... I saw her smiling with my favorite cake baked...and I mentally decided to walk an extra mile the next day...but then my kids were smarter!! they just buttered amma and claimed authority over it!! Kids and grandmoms are always a team...and I have to keep reminding amma that I am her daughter...spare me some!!

I told amma that I wanted to blog this cake...and that she should have called me while she was baking it...well, since its a surprise, she told me that I can always bake it again....So the option was left to glaze the cake and take the pictures of the glaze and the cake.

I decided to bake the same cake again to take the step by step pics...and I let Nidhi do the work.....its that easy!! Plus she was happy to get a second loaf!!

I have always mentioned that I love volume cooking and its always cups and spoons for me...but this cake calls for weights, so you will have to excuse me on that....and grab your kitchen scale!!

Ingredients:

Butter: 150 gms/ 1 1/2 sticks.

Sugar: 150 gms.

Eggs: 3

Flour: 150 gm

Baking Powder: 1 tsp.

Salt: 1/4 tsp.

Orange: One medium orange. I used half for the cake...and 1/4 of the other half for the glaze.

1/4 tsp of grated orange rind.

Orange Glaze:

Sugar: 1/2 cup, powdered.

Fresh orange juice: 2-3 tbsp (or as needed)

Method:

Bring all the ingredients to room temperature. Grease a loaf pan and preheat oven to 180 degree C.

Mix flour, baking powder, and salt...keep aside.

Cream/beat butter and sugar for 1 minute. Add in the eggs. Cream again for 1 minute.

Squeeze in half of the orange juice. Add in the flour mix. Cream again for a min. The batter for pound cake are usually dense and thick....you can add orange juice accordingly. You can also grate orange rind in to the cake for more added flavor...if you prefer.

Lastly, with the help of a spatula, scrape the batter into the greased tin. Bake for 40-45 min for 180 degree C or until a tooth pick inserted in the center comes out clean. Allow it to cool down and drizzle orange glaze over it.

How to make Orange Glaze:

Measure half cup of sugar and powder it finely. Squeeze about 2-3 tbsp of orange juice into it and mix it with a whisk, till you get a smooth glossy glaze.

Drizzle over cake and enjoy!
