Wow!
Thanksgiving whizzed right by me, like a speed train. I saw it coming,
and then, it was gone! Christmas is barreling down the tracks, full
speed ahead. I need to get serious about making cookie dough, and
planning our Christmas Eve dinner. In the meantime, I've been obsessing
about making these Orange Sweet Rolls, ever since I spotted them on
"Mel's Kitchen Cafe".
During the holidays, I enjoy baking Cinnamon Rolls or Sweet Potato Cinnamon Rolls on a chilly wintery day. The idea of making sweet rolls with a buttery orange filling was too much for me to resist. I made the dough, per Mel's recipe, using my Kitchen Aid Stand Mixer.

.%20%20This%20ingredient%20adds%20that%20buttery,%20citrusy,%20vanilla%20bakery%20flavor%20that%20never%20fails%20me.%20This%20dough%20uses%20buttermilk,%20melted%20butter,%20sugar%20and%20eggs.%20%20I%20used%20SAF%20Instant%20Yeast,%20which%20is%20mixed%20in%20with%20the%20dry%20ingredients.%20I%20only%20use%20King%20Arthur%20Unbleached%20Flour,%20and%20for%20this%20recipe%20I%20used%20their%20unbleached%20bread%20flour.%20The%20dough%20mixed%20easily,%20and%20I%20let%20the%20stand%20mixer%20knead%20it%20for%20ten%20minutes.%20Placing%20the%20dough%20into%20a%20greased%20bucket,%20I%20closed%20the%20lid%20and%20then%20placed%20it%20into%20my%20oven.%20%20I%20find%20that%20turning%20my%20oven%20to%20WARM%20for%20two%20minutes,%20then%20shutting%20it%20off%20(while%20the%20dough%20is%20kneading),%20makes%20a%20warm%20and%20cozy%20place%20that%20speeds%20up%20the%20process%20of%20proofing%20the%20dough--%20like%20in%20half%20the%20time!%3C/p%3E%3Cp%3EIn%20the%20meantime,%20I%20softened%20butter%20and%20whisked%20in%20sugar,%20orange%20zest%20and%20freshly%20squeezed%20orange%20juice.%20I%20wanted%20to%20increase%20the%20orange%20flavor,%20so%20I%20added%20this%20Pure%20Orange%20Oil%20(which%20tastes%20much%20better%20than%20orange%20extract).%3C/p%3E%3Cp%3EOne%20taste,%20and%20I%20was%20really%20pleased%20with%20how%20much%20orange%20flavor%20was%20in%20this%20buttery%20filling.%3C/p%3E%3Cp%3EInstead%20of%201-1/2%20hours%20of%20waiting%20time,%20the%20dough%20had%20truly%20doubled%20in%2045%20minutes!%20%20See?%20My%20little%20oven%20warmer%20trick%20has%20never%20failed%20me.%20%20I%20rolled%20the%20dough%20out%20to%20be%20approximately%20a%2012x16%20rectangle.%20%20(I%20have%20a%20plastic%20mat%20that%20I%20use,%20which%20I%20lightly%20flour.%20)%20%20I%20began%20to%20spread%20the%20orange%20butter%20filling...%3C/p%3E%3Cp%3E...leaving%20about%20a%20one-inch%20boarder.%20%20In%20retrospect,%20the%20butter%20filling%20was%20very%20soft.%3C/p%3E%3Cp%3EGrabbing%20the%20longer%20side%20of%20the%20rectangle,%20I%20began%20to%20roll%20the%20dough.%20%20That's%20when%20I%20realized%20that%20perhaps%20I%20should%20have%20briefly%20chilled%20the%20butter--%20just%20enough%20so%20that%20it%20would%20spread,%20but%20not%20spread%20so%20much!%20%20You'll%20see%20what%20I%20mean,%20in%20a%20moment.%20%20I%20pinched%20the%20seams,%20despite%20the%20butter%20being%20so%20soft%20and%20spreading%20everywhere!%3C/p%3E%3Cp%3EOne%20of%20my%20favorite%20little%20tricks%20is%20to%20grab%20a%20long%20piece%20of%20dental%20floss--%20unused,%20of%20course,%20and%20unscented.%20I%20find%20that%20I%20can%20make%20good,%20clean%20slices%20of%20the%20rolled%20dough,%20even%20better%20than%20using%20a%20serrated%20knife.%3C/p%3E%3Cp%3ELike%20that!%3C/p%3E%3Cp%3ESee%20what%20I%20mean%20about%20%22oozing%22%20butter?%20%20Also,%20please%20note%20how%20crammed%20together%20I%20placed%20each%20slice%20into%20a%209%22%20cake%20pan,%20that%20I%20coated%20with%20non-stick%20spray%20and%20then%20placed%20a%20round%20of%20parchment%20paper.%20%20This%20wasn't%20the%20ideal%20situation,%20and%20that%20explanation%20is%20coming%20up%20next.%3C/p%3E%3Cp%3EI%20had%20three%20leftover%20slices,%20which%20I%20gently%20pulled%20and%20twisted%20(per%20Mel's%20suggestion).%20%20I%20covered%20both%20pans%20with%20plastic%20wrap,%20sprayed%20with%20non-stick%20spray%20and%20then%20placed%20the%20dough%20back%20into%20my%20cozy%20oven%20environment,%20and%20they%20rose%20in%20about%2025%20minutes.%20I%20removed%20them,%20and%20preheated%20the%20oven%20to%20350F.%3C/p%3E%3Cp%3EIn%2020%20minutes,%20those%20rolls%20were%20baked%20golden%20and%20had%20risen%20well%20above%20the%20baking%20pan%20and%20they%20were%20tall%20and%20HUGE!%20Wow!%20%20That's%20when%20frosting%20becomes%20a%20baker's%20best%20friend.%20%20I%20took%20a%20detour%20from%20Mel's%20glaze,%20and%20made%20a%20cream%20cheese%20frosting%20instead.%20%20I%20removed%20the%20rolls%20from%20the%20cake%20pan,%20and%20slathered%20the%20cream%20cheese%20frosting%20that%20I%20flavored%20with%20some%20of%20the%20reserved%20orange%20zest,%20some%20fresh%20orange%20juice%20and%20more%20of%20the%20Orange%20Oil.%3C/p%3E%3Cp%3EFrosted%20sweet%20rolls%20are%20so%20much%20fun%20to%20photograph.%20%20How%20tempting%20does%20this%20look?%3C/p%3E%3Cp%3EI%20tore%20off%20the%20first%20%22Godzilla%22%20sized%20sweet%20roll,%20and%20I%20admired%20how%20soft%20and%20tender%20the%20bread%20turned%20out%20to%20be.%20%20The%20three%20hour%20wait%20was%20killing%20me,%20and%20I%20dug%20in.%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20While%20I%20love%20cinnamon%20rolls,%20I%20think%20this%20is%20my%20new%20favorite%20version.%20%20The%20bread%20was%20billowy%20and%20super%20tender.%20%20The%20flavor%20of%20orange%20really%20came%20through,%20and%20I%20think%20the%20pure%20orange%20oil%20was%20a%20great%20additive,%20and%20the%20Buttery%20Sweet%20Dough%20flavor%20emulsion%20gave%20the%20bread%20a%20lot%20of%20added%20flavor.%20%20Though%20the%20butter%20ended%20up%20melting%20and%20spreading%20all%20over%20the%20rolls,%20this%20was%20not%20a%20bad%20thing.%20%20The%20frosting--%20%20incredible!%20%20I%20see%20no%20reason%20why%20the%20rolls%20can't%20be%20made%20the%20night%20before,%20then%20allowed%20to%20proof%20the%20next%20morning%20(which%20might%20take%20a%20little%20extra%20time).%3C/p%3E%3Cp%3EI've%20got%20some%20holiday%20side%20dishes%20that%20I'm%20hoping%20to%20photograph%20and%20share%20before%20Christmas,%20and%20I%20do%20plan%20to%20make%20some%20peppermint%20themed%20recipes%20for%20the%20holidays.%20%20However,%20I%20think%20that%20orange%20has%20it's%20rightful%20place%20this%20time%20of%20year,%20since%20they%20are%20in%20season.%20%20%20%20If%20you%20make%20these,%20you'll%20be%20a%20bakery%20hero.%20%20I%20know%20I'll%20make%20these%20again,%20though%20not%20in%20the%20immediate%20future.%20%20These%20are%20definitely%20not%20Weight%20Watcher's%20friendly,%20but%20they%20are%20a%20great%20treat%20for%20sure.%3C/p%3E){kind=link}
