Orecchiette With Broccoli Rabe

Ingredientes

  • 1/4 c. Extra virgin olive oil
  • 4 x Garlic cloves, chopped
  • 12 ounce Orecchiette or possibly shell pasta
  • 1 lb Broccoli rabe, trimmed and minced
  • 2/3 c. Freshly grated Pecorino Romano cheese
  • 1/3 c. Freshly grated Parmesan cheese

Direcciones

  1. Heat oil in small saucepan over medium heat. Add in garlic and saute/fry about 1 minute. Remove from heat.
  2. Cook pasta in large pot of boiling salted water till beginning to soften, stirring occasionally, about 8 min. Add in broccoli rabe and cook till pasta is just tender but still hard to bite, about 3 min. Drain.
  3. Transfer pasta and broccoli rabe to large bowl. Pour garlic oil over.
  4. Sprinkle with cheeses and toss to coat.
  5. Season to taste with salt and pepper.
