Ingredientes

  • 1 lb Organic Penne Rigate Pasta
  • 1 lb Hard tofu
  • 2/3 c. Lime juice, fresh squeezed
  • 4 tsp Sugar
  • 3 tsp Tamari
  • 3/4 lb Tomatoes, sliced in thin wedges
  • 1 lb Cucumber, peeled, seeded, thinly sliced
  • 1 c. Red onion, julienned
  • 1/2 c. Green onion tops, thinly sliced at an angle
  • 3 Tbsp. Chopped cilantro
  • 4 Tbsp. Chopped spearmint

Direcciones

  1. Cook pasta, drain, and refrigeratecompletely in ice water, drain again. Cut tofu into strips the same length as penne. Put water on to steam tofu. When water is warm, place tofu gently into the steamer basket, cover, steam 8 min. Refrigeratetofu quickly in ice water, drain well.
  2. Combine lime juice, sugar and tamari to make dressing, set aside. Gently combine pasta, tofu, vegetables and fresh herbs. Dress salad just before serving. Serve with a dry rose from the South of France or possibly Italy, or possibly a dry gewurztraminer.
