Receta Orzo Stuffed Peppers
This hearty Italian meal stretches a pound of ground beef (or turkey) into a delicious dinner for six. It is fast and easy to put together but perfect to serve to guests. You can use any color pepper but I like to mix them up, it makes for a pretty presentation!

- Wash and coarsely chop spinach and place it in the bottom of a colander.
- Cook orzo according to package directions in boiling water until tender.
- When orzo is tender pour into colander with the spinach to drain. This will drain the orzo and wilt the spinach.
- Cool the orzo/spinach mixture to room temperature.
- In a large bowl combine beef, salt, pepper, Italian seasoning and egg until will mixed.
- Mix in spinach and orzo.
- Slice the peppers in half from stem to bottom. I don't remove the stems. Scoop out seeds and ribs.
- Pour most of the marinara sauce in the bottom of a 9"x13" baking pan.
- Stuff the peppers with the meat/orzo filling and place in the baking pan.
- Pour the remaining sauce over the top of the peppers.
- Bake in a preheated 350 degree oven for 45 minutes.
- Serve piping hot with a green salad and crusty bread to sop up the sauce.
