Oven Roasted Tomato And Garlic Soup

Ingredientes

  • 4 x plum tomatoes halved lengthwise
  • 2 x garlic cloves chopped
  • 2 Tbsp. pure extra virgin olive oil
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 1 c. pure extra virgin olive oil
  • 8 x garlic cloves peeled, and
  •     sliced paper thin
  • 2 Tbsp. pure extra virgin olive oil
  • 1 med Spanish onion minced
  • 1/2 c. white wine
  • 4 c. chicken stock
  • 2 c. canned plum tomatoes
  • 6 x roasted garlic cloves
  •     Oven Roasted Tomatoes (see above)
  • 2 Tbsp. fresh thyme leaves
  • 1 Tbsp. honey
  •     Salt to taste
  •     Freshly-grnd white pepper to taste

Direcciones

  1. Oven Roasted Tomatoes: Preheat oven to 200 degrees. Place the tomatoes cut-side up on a baking sheet. Combine the garlic and extra virgin olive oil and brush the tomatoes with it, then season to taste with the salt and pepper. Roast till dry and soft, about 8 hrs.
  2. Garlic Chips: Heat oil in a medium skillet till the oil begins to shimmer. Add in the garlic and cook till the slices begin to brown and curl. Remove with a slotted spoon and drain on paper towels.
  3. Tomato Soup: Heat the extra virgin olive oil in a large saucepan over medium-high heat till it begins to smoke and saute/fry the onions till golden brown. Add in the wine, raise the heat to high, and reduce till almost dry. Add in the stock, canned tomatoes, roasted garlic and Oven Roasted Tomatoes and reduce by one-quarter.
  4. Puree the mix in a food processor and pour into a large pot. Add in the thyme, honey and salt and pepper to taste and set aside till just before serving time.
  5. Reheat over medium heat and pour into a large serving bowl. Garnish with Garlic Chips.
  6. This recipe yields 8 servings.
