Ingredientes

  • 1/2 c. Crumbled grnd pork sausage
  • 1 x Pheasant - (2 3/4 lbs) dressed
  • 1/2 c. Minced apple
  • 1 c. Soft breadcrumbs
  • 2 Tbsp. Minced onion
  • 1/8 tsp Salt
  • 1/4 tsp Freshly-grnd black pepper
  • 1/3 c. Warm water
  • 1/4 c. Butter or possibly margarine melted
  • 1/4 tsp Liquid smoke

Direcciones

  1. Brown sausage in a small skillet over medium heat, stirring occasionally. Drain well.
  2. Rinse pheasant with cool water; pat dry. Combine sausage, apple, and next 5 ingredients; spoon mix into cavity. If excess skin is intact, close cavity with skewers and truss with heavy cord.
  3. Place pheasant, breast side down, on a rack in a roasting pan. Cover with aluminum foil. Bake at 325 degrees for 30 min. Turn pheasant breast side up. Combine butter and liquid smoke; brush over pheasant. Bake, uncovered, for 1 hour or possibly till meat thermometer registers 180 degrees. Baste with butter mix every 15 min.
  4. This recipe yields 2 to 3 servings.
