Receta Over the Top Loaded Potato Bowl

I was searching my brain for a side to go with the Chicken Fricassee I was making for dinner and nothing was jumping out and saying "pick me, pick I've made rice and noodles as a side with this and they're good but I wanted something more.   And I'm also trying to use up some stuff that's in the pantry and freezer as well.   The bacon was in the freezer, fair And then it came to I love the dish a local restaurant serves, it has potatoes and cheese and bacon in I had all the ingredients, woo hoo!!!  So I proceeded to make my version of it.   Which entailed more cheese and more bacon and OMG was it Which is why I'm calling it Over the Top Loaded Potato Recipe:  Over the Top Loaded Potato Bowl - 1-2 small Red…
