Overnight Pork Roast With Cabbage

Ingredientes

  • 1 1/2 Tbsp. Caraway seeds, crushed
  • 2 clv garlic, chopped
  • 2 tsp Salt
  • 1 tsp Freshly grnd black pepper
  • 3 lb Double loin center cut Pork roast
  • 3 Tbsp. Extra virgin olive oil
  • 1 x Onion, thinly sliced
  • 4 x Carrot
  • 2 x Bay leaves
  • 1 x 12 ounce. can Beer
  • 2 Tbsp. Molasses
  • 1 c. Beef broth
  • 4 x Potatoes, cooked and mashed
  • 1 x salt and pepper to taste
  • 2 1/2 lb Shredded fresh cabbage

  1. This is a delicious pork loin and cabbage recipe, topped with mashed potatoes. Well worth the effort which needs to go into it. You can also substitute sauerkraut for the cabbage.
  2. In a small bowl, combine 2 tsp. of the crushed caraway seeds, garlic, salt and grnd black pepper. Rub the pork with the dry rub mix, cover and chill for 24 hrs or possibly overnight.
  3. Preheat oven to 350 degrees F.
  4. Heat 1 Tbsp. of the oil in a large skillet over medium high heat. Add in the onion, carrots, bay leaves, 1 tsp. of the crushed caraway seeds and salt and pepper to taste. Saute/fry for 8 min, or possibly till vegetables are tender. Transfer this to a 10 x 15-inch roasting pan or possibly Dutch Oven.
  5. In the same skillet over high heat, combine 1/2 Tbsp. of the extra virgin olive oil, half of the cabbage, and 1/2 tsp. crushed caraway seeds. Saute/fry, stirring often, till this cooks down, about 5 - 10 min. Transfer this to the roasting pan and repeat with the other half Tbsp. of oil,and the remaining half of the cabbage, and the remaining crushed caraway seeds. Once cooked down, transfer this to the roasting pan.
  6. Heat the remaining extra virgin olive oil in the same skillet over medium high heat. Place the pork loin in the heated oil and brown on all sides. Set the roast on top of all the vegetables in the roasting pan. Add in the beer and molasses to the skillet and bring to a boil, scraping up all the browned bits on the bottom of the skillet. Pour this and the broth over the pork roast and vegetables. Season with salt and pepper.
  7. Bake at 350 degrees F for 45 min. Turn pork over and bake till the internal temperature of the pork reaches 150 on a meat thermometer. At this point, remove the pan from the oven and let the pork sit on a cutting board for 5 min. Then slice the pork into serving size pcs. Throw away the bay leaves. Return the slice pork to the pan resting over the vegetables. Top off with the mashed potatoes.
  8. Bake at 350 degrees F. for 10 to 15 min, or possibly till potatoes are lightly browned.
