Oysters Baked With Garlic Pine Nut Butter

Ingredientes

  • 1/4 c. Pine nuts
  • 3 x Garlic cloves, peeled
  • 2 x Shallots, peeled
  • 2 Tbsp. Parsley, fresh, minced
  • 2 Tbsp. Chives, fresh, minced
  • 2 Tbsp. Juice, lemon
  • 1 Tbsp. Brandy
  • 1 tsp Pepper, black
  • 3/4 c. Butter, room temperature
  • 18 x Oysters, in shells, scrubbed
  •     Rock salt

Direcciones

  1. Scatter pine nuts in a pie plate nd bake in a 350 degree oven till golden brown, 4-6 min. Pour toasted nuts into a food processor along with the garlic, shallots, parsley, chives, lemon juice, brandy and pepper; whirl till finely minced. Slowly add in the butter and pulse till just blended; bits of all the ingredients should still be visible. Shuck oysters and throw away top shells. Nestle oysters, in their bottom shells, in a 1/2 inch layer of rock salt in a baking pan or possibly shallow oven-proof dish. Spoon about 1 tsp. butter on top of each oyster (freeze leftover butter) Bake oysters in a 375 degree oven till they become hard and butter melts, 8-10 min.
