Receta Paksiw na Pata Batangas Style
Paksiw na Pata Batangas Style is a type of paksiw where pork leg and knuckles are cooked in a simple mixture of vinegar, garlic and onions. We all know the other version which uses soy sauce and a bit of sugar, this one is its bare bones version made by house moms on budget or in remote provinces where soy sauce at times may not be available.
When I first saw this dish long time ago I was quite sceptical, I am not sure what to expect but the minute I tried them I was quite surprised, it tasted like sinigang with hints of paksiw due to the garlic, bay leaf and peppercorns. Like any other paksiw dishes it definitely goes well with hot rice and definitely lots of it, its sour sauce makes you want to have more. Paksiw na Pata Batangas Style Save Print Prep time Cook time Total time Serves: 5-6 Ingredients 1.5 kg pork leg, sliced into sections ½ cup cane vinegar 1 head garlic, whole sliced in half crosswise 2 medium sized red onions, quartered 3 tbsp peppercorns 3 pcs bay leaf 3 pcs green chillies fish sauce water Instructions In a pot add the pork leg and enough water to cover it. Bring to a boil and simmer for 5 minutes. Drain the pot and rinse the pork leg removing any scum. Clean the pot as well if necessary. Bring back the pork leg together garlic, peppercorn and bay leaf into the pot. Add enough water just to barely cover the pork leg, bring to a boil then simmer in low heat for 45 minutes. Check for water level once in a while and don’t let it dry out. Add the green chillies, vinegar, red onions and fish sauce to taste, continue to simmer for 30 more minutes or until pork is really tender. Serve with hot rice. 3.5.3226
