%3C/p%3E%3Cp%3E2.%20I%20won't%20over%20eat%20(%20portion%20control)%20It%20only%20makes%20one%20muffin%3C/p%3E%3Cp%3E3.%20Leftovers%20won't%20end%20up%20getting%20stale.%20(%20sometimes%20I%20make%20things%20with%20coconut%20flour,%20%20and%20if%20we%20don't%20eat%20it%20immediately%20by%20the%20next%20day%20it%20starts%20to%20dry%20out)%3C/p%3E%3Cp%3EDid%20I%20mention%20that%20I'm%20trying%20to%20lose%20weight%20(%20yes%20again-%20that%2010%20pounds%20just%20won't%20stay%20away)%20and%20low%20carb%20works%20best%20for%20me%20not%20only%20for%20weight%20loss,%20but%20to%20also%20help%20stabilize%20my%20blood%20sugar.%20I've%20been%20eating%20mostly%20vegetables,%20nuts,%20%20and%20proteins%20but%20I'm%20craving%20something%20more.%20I%20think%20this%20low%20carb%20grain%20free%20English%20muffin%20will%20do%20it!%20Since%20I'm%20doing%20low%20carb,%20I%20can%20put%20butter%20on%20it!%20Yum!%3C/p%3E%3Cp%3EI%20would%20consider%20following%20the%20ever%20popular%20Paleo%20diet,%20but%20I'm%20a%20vegetarian%20and%20it%20would%20be%20difficult%20and%20%20limiting.%20I%20think%20the%20concept%20and%20way%20of%20eating%20is%20a%20good%20one.%20I%20think%20in%20general%20we%20eat%20way%20too%20many%20processed%20foods%20that%20are%20not%20real%20food%20and%20too%20much%20sweets%20(%20even%20fruit)%20.%3C/p%3E%3Cp%3EToday's%20fruit%20is%20not%20like%20fruit%20of%20years%20ago.%20Today's%20fruit%20is%20much%20bigger,%20much%20sweeter,%20and%20much%20more%20plentiful.%20People%20used%20to%20eat%20fruit%20in%20season-%20they%20even%20gathered%20their%20own%20berries%20and%20ate%20less.%20That%20may%20have%20been%20a%20good%20thing.%3C/p%3E%3Cp%3EToday's%20fruit%20is%20mostly%20hybrids%20that%20have%20been%20developed%20to%20be%20larger,%20sweeter,%20and%20more%20beautiful%20.%20The%20larger%20size%20and%20sweeter%20fruit%20may%20be%20more%20than%20our%20blood%20sugar%20can%20handle.%20I%20believe%20that%20today's%20fruit%20is%20just%20way%20too%20full%20of%20sugar.Despite%20being%20a%20fruit%20lover,%20I've%20cut%20back%20on%20the%20amount%20I%20eat,%20and%20truthfully%20I%20feel%20better%20and%20my%20blood%20sugar%20is%20more%20stable.%20I%20concentrate%20on%20eating%20berries%20which%20our%20the%20lowest%20glycemic%20index%20fruits.%20(%20This%20was%20a%20result%20of%20reading%20Wheat%20Belly%20by%20Dr,%20Davis%20and%20Grain%20Brain%20by%20Dr.%20Perlmutter-%20two%20new%20books%20by%20doctors%20who%20say%20grain%20and%20sweets%20are%20setting%20us%20up%20for%20diabetes,%20all%20kind%20of%20autoimmune%20disorders,%20arthritis,%20skin%20problems,%20and%20even%20brain%20fogginess,%20learning%20problems%20and%20dementia.%3C/p%3E%3Cp%3EI%20had%20been%20feeling%20tired,%20foggy,%20and%20had%20a%20lot%20of%20mood%20swings.%20I%20was%20craving%20sweets%20and%20overeating.%20Since%20I%20cut%20out%20the%20grain%20and%20limit%20the%20fruits-%20I%20actually%20feel%20better.%20I%20feel%20like%20I'm%20less%20foggy,%20I%20stopped%20craving%20sweets,%20and%20the%20mood%20swings%20are%20gone.%20I%20have%20more%20energy%20too.%3C/p%3E%3Cp%3EI%20saw%20this%20grain%20free%20bread%20recipe%20on%20a%20site%20called%20Simply%20Vegetarian%20Paleo%20%20.%20The%20site%20posts%20recipes%20from%20lots%20of%20bloggers.%3C/p%3E%3Cp%3EThis%20Paleo%20English%20Muffin%20recipe%20came%20from%20a%20healthy%20blog%20called%20Beauty%20and%20The%20Foodie.%20%20.I%20liked%20the%20blog%20so%20much%20,%20I%20am%20now%20a%20follower.%20Kathy%20posts%20lots%20of%20recipes%20worth%20checking%20out.%20Apparently%20there%20are%20ways%20to%20be%20a%20vegetarian%20and%20follow%20the%20Paleo%20diet.%20This%20is%20my%20adaption%20of%20Kathy's%20recipe.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20400%20degrees%3C/p%3E%3Cp%3EBeat%20the%20egg%20in%20a%20bowl%20add%20then%20%20remainder%20of%20ingredients%20and%20mix%20with%20a%20fork%20until%20smooth.%20Transfer%20batter%20to%20a%20single%20ramekin%20and%20bake%20at%20400%20degrees%20for%2012-15%20minutes.(%20Stacy%20said%20you%20can%20also%20microwave%20the%20ramekin%20for%201%20and%20half%20minutes%20-I%20don't%20usually%20microwave-%20but%20it%20would%20be%20fast)%3C/p%3E%3Cp%3EOnce%20baked.%20Take%20a%20knife%20and%20loosen%20the%20sides%20of%20the%20ramekin%20and%20the%20muffin%20will%20slide%20right%20out.%20When%20cool%20enough%20to%20handle,%20slice%20the%20muffin%20in%20half%20and%20toast%20it%20in%20a%20frying%20pan,%20making%20sure%20to%20press%20it%20down.%3C/p%3E%3Cp%3EIt's%20uncanny%20%20how%20it%20looks%20exactly%20like%20an%20English%20Muffin.%3C/p%3E%3Cp%3E**%20MY%20OPINION:%20Personally,%20I%20liked%20it%20but%20it%20didn't%20exactly%20taste%20like%20an%20English%20Muffin%20to%20me.%20It%20tasted%20a%20little%20egg-ier%20at%20first.%20However,%20I%20found%20a%20way%20that%20I%20did%20think%20it%20tasted%20more%20like%20an%20English%20muffin.%20After%20toasting%20and%20cooling,%20I%20placed%20it%20in%20the%20refrigerator%20uncovered%20overnight.%20In%20the%20morning%20it%20wasn't%20eg
