%3C/p%3E%3Cp%3EI%20only%20have%20about%20a%20month%20to%20go%20before%20this%20semester%20is%20over%20and%20I%20can't%20wait.%20As%20you%20can%20tell%20by%20my%20few%20posts%20this%20year%20compared%20to%20other%20years,%20my%20academic%20work%20has%20been%20on%20overdrive.%20Not%20only%20that,%20this%20semester%20is%20one%20of%20my%20toughest%20yet.%3C/p%3E%3Cp%3EBecause%20I%20have%20been%20so%20busy,%20I%20have%20been%20primarily%20subsisting%20on%20rotisserie%20chicken%20and%20pre-packaged%20salad%20mixes.%20On%20the%20instance%20I%20do%20have%20time%20to%20cook,%20I%20prepare%20something%20that%20I%20can%20eat%20for%20several%20meals%20to%20maximize%20my%20time%20and%20effort.%3C/p%3E%3Cp%3EEarlier%20in%20the%20semester,%20I%20prepared%20some%20homemade%20chicken%20broth%20and%20have%20kept%20it%20in%20the%20freezer.%20There's%20no%20comparison%20between%20boxed%20and%20canned%20chicken%20broth!%20You%20can't%20get%20the%20same%20silkiness%20in%20boxed%20broth.%20To%20make%20the%20broth%20I%20basically%20build%20up%20a%20stock%20of%20chicken%20bones%20from%20roasted%20chickens%20and%20less-than-attractive%20vegetables%20(carrots,%20celery,%20parsley,%20and%20onion)%20and%20freeze%20them.%20Once%20I%20get%20several%20quart%20bags%20of%20bones%20and%20vegetables,%20I%20add%20them%20to%20my%20two%20stock%20pots,%20cover%20the%20ingredients%20with%20water,%20and%20sometimes%20supplement%20the%20ingredients%20with%20more%20fresh%20vegetables.%20I%20season%20with%20sage,%20thyme,%20parsley,%20and%20bay%20leaves%20and%20allow%20the%20mixture%20to%20simmer%20for%20at%20least%20an%20hour%20and%20a%20half.%20I%20allow%20the%20broth%20to%20cool%20to%20room%20temperature%20then%20strain%20it%20and%20cool%20it%20completely%20in%20the%20refrigerator.%20I%20scrape%20any%20residual%20fat%20off%20the%20top%20to%20make%20the%20broth%20nearly%20fat-free.%20It's%20so%20wonderful%20to%20have%20on%20hand.%20One%20other%20thing%20I%20should%20note%20is%20that%20broth%20does%20not%20keep%20long%20in%20the%20refrigerator%20and%20you%20also%20need%20to%20be%20very%20careful%20to%20cool%20it%20completely%20before%20refrigeration%20because%20it%20can%20sour%20easily.%20If%20you%20can't%20use%20it%20within%20a%20couple%20of%20days,%20freeze%20it.%3C/p%3E%3Cp%3EMoving%20on%20from%20that,%20I%20made%20a%20wonderful%20soup%20based%20on%20a%20classic%20Italian%20recipe,%20but%20I%20altered%20it%20slightly%20for%20the%20Paleo%20touch.%20I%20used%20almonds%20instead%20of%20breadcrumbs%20and%20Parmesan,%20and%20I%20actually%20liked%20their%20nutty%20flavor%20in%20the%20meatballs.%20One%20of%20my%20favorite%20parts%20of%20this%20recipe%20is%20the%20drizzle%20of%20egg%20into%20the%20end%20of%20the%20soup-straciatella.%20It's%20just%20like%20little%20yellow%20ribbons%20running%20through%20the%20soup%20and%20they%20not%20only%20look%20nice%20but%20they%20add%20more%20protein%20to%20each%20serving.%20I%20also%20added%20more%20vegetables%20than%20the%20original%20recipe%20has.%3C/p%3E%3Cp%3EPaleo%20Italian%20Wedding%20Soup%20(Minestra%20Maritata)%3C/p%3E%3Cp%3EFor%20the%20meatballs:%3C/p%3E%3Cp%3E1.%20%20Combine%20all%20the%20ingredients%20for%20the%20meatballs%20in%20a%20large%20bowl.%20Roll%20the%20meat%20into%20small%20meatballs%20(I%20got%20about%2048).%20Set%20aside.%3C/p%3E%3Cp%3E2.%20Heat%20a%20soup%20pot%20over%20medium%20heat.%20Heat%20the%20oil,%20then%20add%20the%20celery,%20carrot,%20and%20onion.%20Sweat%20the%20vegetables%20until%20they%20are%20tender.%3C/p%3E%3Cp%3E3.%20Add%20the%20chicken%20broth,%20season%20with%20basil%20and%20oregano,%20and%20bring%20the%20temperature%20up%20just%20enough%20for%20a%20gentle%20simmer.%20Drop%20in%20the%20meatballs%20and%20allow%20them%20to%20cook%20through.%20They%20will%20float%20to%20the%20top%20as%20they%20cook.%20Depending%20on%20how%20big%20the%20meatballs%20are,%20it%20could%20take%208-10%20minutes%20for%20them%20to%20cook.%3C/p%3E%3Cp%3E4.%20Add%20in%20the%20spinach%20and%20allow%20it%20to%20soften%20about%20a%20minute.%3C/p%3E%3Cp%3E5.%20Pour%20in%20the%20egg%20in%20a%20thin%20stream,%20stirring%20with%20a%20fork%20at%20the%20point%20that%20it%20meets%20the%20soup.%20Serve%20the%20soup%20immediately.%3C/p%3E%3Cp%3EServings%20per%20recipe:8%3C/p%3E%3Cp%3EPer%20serving:%3C/p%3E%3Cp%3ECalories:%20262.2%3C/p%3E%3Cp%3EFat:%20%2020.5%20g%3C/p%3E%3Cp%3ESaturated%20fat:%206.8%20g%3C/p%3E%3Cp%3ECholesterol:%20122.5%20mg%3C/p%3E%3Cp%3ESodium:%20117.9%20mg%3C/p%3E%3Cp%3ECarbohydrate:%202.5%20g%3C/p%3E%3Cp%3EFiber:%201.4%20g%3C/p%3E%3Cp%3ESugars:%200.4%20g%3C/p%3E%3Cp%3EProtein:%2016.8%20g%3C/p%3E){kind=link}
