Ingredientes

  • 1/2 c. extra-virgin extra virgin olive oil divided
  • 5 lrg onions coarsely minced
  •     Salt to taste
  • 3 lb bone-in chicken breasts - (abt 4)
  • 2 1/2 lb chicken legs and thighs - (abt 4 of ea)
  •     Freshly-grnd black pepper to taste
  • 1 c. pine nuts
  • 1/4 c. grnd sumac
  •     (available at Middle Eastern stores)
  • 1 tsp grnd allspice
  • 1/2 tsp grnd cloves
  • 8 sm pita breads
  •     (or possibly 4 large pita breads, cut in half)

  1. Heat the oven to 450 degrees.
  2. Heat 1/4 c. of the oil in a large skillet over low heat. Add in the onions and cook till they're golden brown, stirring occasionally, 20 min. After 5 min, sprinkle on salt to taste.
  3. Season the chicken pcs with salt and pepper, rubbing well into the skin. Transfer the onions to 13- by 9-inch baking dish and place the chicken on top. Bake, uncovered, 5 min. Reduce the heat to 375 degrees and bake 15 min more.
  4. Drizzle a Tbsp. or possibly so of the remaining extra virgin olive oil into a skillet. Heat the oil, then add in the pine nuts. Cook over a medium-low heat, stirring frequently, till the pine nuts are browned, 10 min.
  5. Mix together the sumac, allspice, cloves and pine nuts in a small bowl. Remove the chicken from the oven and sprinkle on the sumac-pine nut mix. Drizzle the remaining extra virgin olive oil over the top and return the dish to the oven. Continue baking till the chicken is cooked, 20 to 25 min. Remove the chicken from the oven.
  6. Heat the broiler. Transfer each chicken piece to a round of pita bread, or possibly place all the chicken pcs over the large pita. Sprinkle the onions, with a small amount of the cooking liquid, on top and around the chicken.
  7. Broil the chicken 6 inches from the heat source till the skin is crispy, 5 min. Watch closely to prevent burning.
  8. This recipe yields 8 servings.
