These moist and spicy Pan Fried Salmon Burgers are is a lighter, refreshing alternative from the traditional. Pan Fried Salmon Burgers   Author: Marlene Baird Prep time:  Cook time:  Total time:  Save Print Ingredients 1 pound center cut salmon, skinned ⅓ cup mayonnaise 1 Tablespoons fish sauce 1 tablespoons Sambal Oelek 2 garlic cloves, minced 1 medium shallot, minced ½ Tablespoon minced fresh ginger ½ teaspoon finely grated lemon zest 2 Tablespoons chopped cilantro 1 Tablespoon chopped mint salt and freshly ground pepper 1½ cups Japanese panko or plain dry bread crumbs Directions In a food processor, pulse the chopped salmon about 10 times, or until minced. Set aside. In a shallow bowl, add the mayo, fish sauce, sambal oelek, garlic, shallot, ginger, lemon zest, cilantro, mint, salt and pepper. Add the mixture to the salmon along with 1 cup of the panko. Fold the salmon mixture together with a rubber spatula. With lightly oiled hands, pat the mixture into 6 burgers. Cover with plastic wrap and refrigerate for 2 hours. In a shallow bowl, mix the remaining ½ cup of panko. Pat the mixture onto the salmon burgers. In a large nonstick skillet, heat 2 tablespoons oil Add salmon patties to the skillet and cook over moderately high heat, turning once, until well browned but barely cooked in the center, about 7 minutes. Not only are these salmon burgers healthy and delicious, they’re also incredibly easy to prepare.  They also happen to be my pescetarian daughter’s favorite burger too. I thought it was interesting when I attended a family function recently that the host could care less that there was one vegetarian and one pescetarian attending the party.  There was no seafood and the only protein was not anything a vegetarian could eat.  When my daughter comes over, I always make something that she can enjoy too.  And oddly enough, there were a few carnivores that opted for the salmon burger instead because they never tried one.  It is also nice to see a carnivore venture out of their comfort zone every now and then too.
