Ingredientes

  • 800 gm Small vine cherry tomatoes
  •     Extra virgin olive oil
  •     Fresh basil leaves
  •     Crushed dry chillies
  •     Thai fish sauce
  •     Segments of spring onion
  •     Fresh basil leaves

Direcciones

  1. Combine cherry tomatoes in a non-stick frying pan with 4 Tbsp. extra virgin olive oil. Season with crushed dry chillies. Scatter with basil leaves and saute/fry over a medium heat till skins begin to split. This will take about 4 to 5 min. Don't let them brown. Sprinkle with Thai fish sauce, garnish with spring onion segments.
  2. Surround salmon fillets with pan roasted cherry tomatoes and spring onion segments and serve immediately.
