Pan-roasted Lemon Asparagus

As a traditional Mediterranean, I typically grill my asparagus with garlic and olive oil. cooking with garlic for us is like salt for an American. Which, I must tell, you, I absolutely love cooking with garlic.

Asparagus is a great spring veggie that everyone seems to love.

Having extra lemons in my pantry coaxed me into making this Pan-roasted Lemon Asparagus dish

Roasted Asparagus with Lemons

Ingredients

Directions

I a skillet on medium-high heat add the olive oil to the hot pan.

toss in the asparagus in the pan. Lower the temperature to medium and let cook about 10 minutes.

Add the coarse salt and pepper

Add the lemon slices and let them brown on both sides.

Continue to cook the asparagus and lemon slices for another 5 or 6 minutes

remove from heat add the lemon juice to the pan.

Serve immediately.

The result: A Sweet tangy blend from the lemons pairs so well with the asparagus. It would be great to serve as a breakfast side dish too.

For me, what I love most about cooking is that you can make something you love like asparagus and try a way you have never tried before.

Some people just love the tried and true. Me, on the other hand, must try something new all the time..
