Ingredientes

  • 2 Tbsp. unsalted butter
  • 1 x red onion finely minced
  • 3 x garlic cloves finely minced
  • 1 c. Myer's dark rum
  • 3 c. chicken stock
  • 2 Tbsp. ancho puree
  • 1/4 c. molasses
  • 2 tsp coarsely-grnd black pepper
  • 4 x filet mignon steaks - (8 ounce ea)
  •     Salt to taste

Direcciones

  1. Heat butter in medium saucepan over medium heat and sweat onions and garlic. Add in rum, bring to a boil and reduce to 1/4 c.. Add in stock, bring to a boil and reduce heat. Whisk in ancho puree, molasses and pepper and simmer till reduced to 1 c..
  2. Preheat grill. Season steaks on both sides with salt. Cook for 2 to 3 min on each side till medium-rare.
