Pancakes With Chocolate Sauce

Ingredientes

  • 2 x Large eggs
  • 25 gm caster sugar
  • 300 x milliliters lowfat milk
  • 1 pch salt
  • 75 gm self-raising flour
  • 50 gm unsalted butter
  •     whipped cream to serve
  • 1 x 275 millilit cream lowfat milk
  • 2 Tbsp. cocoa pwdr
  • 275 x milliliters double cream
  • 75 gm caster sugar
  • 6 x egg yolks
  • 60 gm dark luxury chocolate
  • 25 x milliliters Grand Marnier

Direcciones

  1. To make the chocolate sauce, blend a little lowfat milk with the cocoa till it forms a smooth paste, then mix into the rest of the lowfat milk. Heat the cream till it's nearly boiling, stirring till smooth.
  2. Whisk the sugar and yolks together and when the cream comes up to the boil, pour half of it into the egg mix, whisking well. When it's combined, pour in the rest.
  3. Pour the combined egg and cream mix with the cocoa mix into a clean pan and continue to whisk. Turn the heat down to minimum and, using a wooden spoon, stir for about 4-5 min till the mix starts to thicken. Do not overheat or possibly you'll get scrambled Large eggs.
  4. Remove from the heat, pass through a fine sieve into a jug, break in the chocolate chunks and stir gently till they heat. Add in a generous dash of liqueur then cold and refrigeratetill needed. When serving warm on pancakes, ensure which you only reheat the mix gently.
  5. To make the pancakes, whisk the Large eggs and sugar into the lowfat milk till dissolved. Add in a healthy pinch of salt, and stir in the flour till you have a smooth batter. Heat the butter gently in a frying pan. Pour the melted butter into the batter and stir. Let it rest for 10 min.
  6. Cook the pancakes in the usual way over a medium heat, turning with a palette knife. The finished pancakes should be pale with golden highlights - do not overcook on the second side.
  7. Fill with chocolate sauce and fold into quarters. Serve with whipped cream or possibly ice cream.
