Ingredientes

  • 1 Tbsp. Sugar
  • 3 Tbsp. Soy sauce
  • 1 Tbsp. Vinegar
  • 1/2 Tbsp. Oyster sauce
  • 1/2 Tbsp. Mushroom soy sauce
  • 1 1/2 Tbsp. Catsup
  • 3 x (1/2 inch) pieces ginger root
  • 1 lb Flank steak or possibly lean beef
  •     Salt, pepper
  • 1 x Egg, beaten
  • 1/4 c. Cornstarch
  • 3 Tbsp. Oil
  • 4 x Dry chiles
  • 2 Tbsp. Minced green onions
  • 5 sm pieces dry tangerine or possibly orange peel
  •     Seasoning Sauce

Direcciones

  1. To make the Seasoning Sauce: Combine sugar, soy sauce, vinegar, oyster sauce, mushroom soy sauce, catsup and ginger in small bowl.
  2. Makes about 1/2cup.
  3. Slice beef paper-thin into 1/2-inch slices across grain and trim pcs about 1-inch long. Season to taste with salt and pepper. Dip into egg, then coat lightly with cornstarch. Heat 1 Tbsp. oil in wok.
  4. Drop beef into warm oil to brown quickly. Remove from wok. Set aside to keep hot.
  5. Add in 2 Tbsp. oil to wok. Add in chiles, green onions and orange peel.
  6. Saute/fry over high heat a few seconds. Pour Seasoning Sauce all at once into wok.
  7. Return beef mix to wok. Mix well to heat thoroughly and quickly.
  8. Throw away ginger from Seasoning Sauce.
  9. Makes 2 to 4 servings.
