PANEER PAYASAM - COTTAGE CHEESE IN SWEET MILK
No festival is complete without a dessert and if its prepared with paneer , then definitely its going to be wonderful. This is a classic payasam with paneer and sweet milk that envelops it.
So prepare this delicious payasam with freshly prepared paneer and enjoy :)
Serves : 4
Preparation time : 15 mins + 20 mins. of draining time
For this payasam you need
- 2 Litres of Milk
- 1/2 cup of sugar
- Few drops of Lemon Juice
- 10 nos. of Almonds and Pistachios -blanched and chopped
Preparation
Put 1 litre of milk into a pan and bring it to boil .When the milk starts to boil add lemon juice and let the milk curdle.
Hang up the curdled milk in a muslin cloth and allow the whey to drain off .Let it rest there for about 20 mins.
Now boil remaining 1 ltr milk and add sugar,then let it simmer on fairly low heat until it is reduced to half and is quite thick,taking care not to let it burn or spill over.
Take the paneer from the muslin and just crumble it lightly with your hands and add it to the milk and let it simmer again on low heat for a couple of mins..
Remove from heat,chill well and serve sprinkled with the slices nuts.
Delicious Paneer payasam is ready to be served.
