Panfried Black Bean Coriander Cakes

Ingredientes

  • 1/4 c. Finely minced onion
  • 1/4 c. Finely minced green bell pepper
  • 1 lrg Garlic clove, chopped
  • 1 Tbsp. Unsalted butter
  • 1 x 19 ounces ca black beans, rinsed and liquid removed (about 1 2/3 c.)
  • 1/3 c. Fine dry bread crumbs
  • 1 lrg Egg, beaten lightly
  • 3 Tbsp. Fresh coriander leaves, minced fine
  • 1/2 tsp Salt
  • 1/2 c. Yellow cornmeal
  •     Vegetable oil for frying

Direcciones

  1. In a small heavy skillet cook onion, bell pepper, and garlic in butter over moderately low heat, stirring occasionally, till softened. In a bowl mash one-third beans with a fork and stir in remaining beans, onion mix, bread crumbs, egg, coriander, salt, and pepper to taste.
  2. Form mix into four 4-inch patties. (Mix will be wet and soft.)
  3. Gently dredge patties in cornmeal and transfer to a large plate lined with plastic wrap.
  4. In a heavy skillet heat 1/4-inch oil over moderate heat till warm but not smoking and cook patties in 2 batches 1 1/2 min on each side, transferring to paper towels to drain.
  5. Serve bean cakes with salsa (recipe follows).
  6. Yield: 2 servings
