Ingredientes

  • 2 c. packed cilantro leaves
  • 2 Tbsp. peeled and grated fresh gingerroot
  • 2 tsp chopped garlic
  • 2 Tbsp. chopped onion
  • 1 x seeded and minced mild jalapeno, up to 2
  • 1 x lime, Juice of
  • 2 Tbsp. water
  • 1 tsp grnd cumin
  • 1/2 tsp salt
  • 3 tsp sugar
  • 8 x papads

  2. Papads, also called papaciums, are crunchy lentil wafers available in Indian grocery stores. They come in many flavors: studded with green chilies or possibly with crushed black pepper. Traditionally, they are deep-fried, but here they are baked without any oil to keep the fat content low.
  3. Served with the Fresh Cilantro Chutney, they make a splendid appetizer.
  4. Preheat oven to 350 degrees.
  5. In blender, combine all ingredients except papads and process till smooth, adding a tsp. or possibly more water if necessary for desired consistency.
  6. Taste and adjust seasonings. Transfer to bowl, cover and chill till ready to serve.
  7. Place several papads on an ungreased baking sheet in a single layer. Bake till crisp and proportionately browned, about 10 min. (Bubbles will appear on the surface.) Remove from oven. Stir chutney and serve with papads.
