Papaya Fritters
Ingredients 2 to 2 1/2 cups diced fruit of choice (one 15 oz can papaya chunks, diced) 1 10 ounce bag fruit fritter mix 1 egg 1/4 to 1/2 cup milk vegetable oil for frying non-stick spray for baking shredded coconut and sugar for dusting
Cooking Directions To Fry: Prep: Dice 2 cups of fruit of choice.{Do not dice blueberries) Mix 1/4 cup milk and egg in mixing bowl. Mix in two-thirds of package of fritter batter. Stir to smooth consistency. Mix in 2 cups of diced fruit of choice. Mix in the rest of the fritter batter and mix well. For frying, a thick consistency is best. You may add a little more milk but remember, you want a thick consistency. After oil reaches frying temperature, approximately 350 to 375 degrees, place your mixture into hot oil, one tablespoon at a time, gently; do not spatter oil. Fry to golden brown. Take out with tongs and allow to drain on paper towels. Serving suggestions: top with an icing or a sprinkle of powdered or granulated sugar. Top with flaked coconut if desired. To Bake: Mix 1/3 to 1/2 cup milk, egg and batter to smooth consistency as above, then add 2 1/2 cups diced fruit and stir well. Spoon into muffin tins 2/3 full and bake for 18 to 24 minutes at 375 degrees; time depends on size of muffin and oven temps variations. Depending on the size of your muffin tin, expect to make 8 to 14 of them. Fried Sliced Fruit Fritters: Mix egg and 1/3 to 1/2 cup milk, mix in batter to smooth consistency without fruit. Slice your fruit, apples, pears or large strawberries into slices 1/4-inch thick. Dip into batter, place in oil with tongs and fry until golden brown. Take out with tongs and allow to drain on paper towels.
