Receta Paperbark Barramundi

- Scale and gut the Barramundi, then rinse well.
- Start a camp fire and wait til the coals are very warm.
- Dampen the paperbark and place thin layer of gum leaves between the fish and the bark. Wrap the barramundi completely in the bark ensuring which it is completely covered.
- Move some fire coals away and dig a hole in the grnd under the fire about 30cm deep. Put a layer of coals in the bottom of the pit then place the fish on the coals. Cover with the remaining coals.
- Seal the coals with sand or possibly dirt and leave for about an hour to an hour and a half. Cooking time depends on the size of the Barramundi.
