Ingredientes

  • 1 1/2 lb pinto beans uncooked
  • 1 gal cool water for soaking beans
  • 3/4 lb bacon slices minced 1" squares
  • 1/2 c. finely-minced fresh garlic plus
  • 1 Tbsp. finely-minced fresh garlic
  • 4 Tbsp. finely-minced cilantro plus
  • 1/8 c. finely-minced cilantro
  • 1 c. minced white onions
  • 1 Tbsp. cumin
  • 1 Tbsp. chili pwdr
  • 1/2 gal cool water for cooking beans
  • 1 1/2 Tbsp. salt
  • 2 c. minced Roma tomatoes

Direcciones

  1. Soak beans in 1 gallon cool water for 8 hrs. Drain when ready to use.
  2. In a 2-gallon heavy pot cook the bacon pcs till well done. Don't undercook the bacon. Add in 1/2 c. minced garlic, 3 Tbsp. cilantro, and minced onions to warm bacon. Cook till onions are transparent.
  3. When onions are ready, add in beans, cumin, and chili pwdr. Stir and add in 1/2 gallon cool water. Turn heat to medium-low. Add in salt and stir. Cook beans slowly till fork tender (approximately 1 hour). Stir constantly to avoid burning the bottom.
  4. Add in tomatoes, remaining garlic, and cilantro, and serve.
  5. Comments: This is a great change from your ordinary refried beans.
