This recipe has become a quick and easy staple in our house. I swear it takes minutes to put together but it’s well worth it. The best part is that people will believe that you have cooked like crazy yet you did something so simple and easy.

I love the flavor and the fact that it’s baked. It’s not an expensive recipe but it has a nice bang for your buck. I also love the fact that you can marinade the chicken and come up with a different flavor. A good buttermilk bath with be awesome with this chicken.

This is a easy recipe that you can do so many things with. You could add some spice, season salt, extra pepper, or even a little Tabasco bath for an added kick!

Ingredients:

Cooking spray

Directions:

Pre-heat oven to 350 degrees

Spray a baking dish or jelly roll pan down with Pam or some other type of cooking spray. For easy clean up line your pan or baking dish with foil, or parchment paper. Spray the foil or paper with cooking spray.

In a shallow dish add panko, parmesan cheese, salt and pepper, and mix together.

In a separate bowl add eggs and scramble up with a fork until the eggs are frothy.

One at a time take each chicken breast and add it to the egg dip, then add each chicken breast to the panko dish and evenly coat the chicken breast with the panko spice mixture.

Place the chicken on the sprayed pan, then bake for 30 minutes or until the chicken is cooked in the center to 165 degrees. Don’t trust anything other that what a cooking thermometer says.
