So lately I’ve been trying to make “smarter” choices in my diet. I wouldn’t say I’m on a diet per say because that word kind of gives me a complex. I think of starving, not being able to eat what I want and generally being grumpy. Not a fun thing in my book. So I just focus on making smarter choices overall. I’ve been trying to loose the last of Rylin that’s hanging on to my fabulous hips. I’m excited to say I’ve lost all her baby weight! I was so excited about this then I remembered that I never actually lost all of Miss K. There’s still 7 lbs of her currently hanging around on these hips. Oh the joys of having those babies! I wish I was one of those lucky women that walk out of the hospital and can throw on my pre-pregnancy jeans with no troubles. I just got to put on my favorite pre-pregnancy jeans, comfortably, after 5 months. Better than 5 years or never right? Then you have Kate Middleton that comes out and shows off her baby within a few hours of having her baby. Let’s just say I don’t care how big of “team” I had to make me look ravishing or how many pain meds I was on. That was not me. Wait, maybe with enough pain meds I could have done that!

While on this journey to make smarter choices I’ve been eating a lot of protein and not so many carbs, especially pasta. Oh, how I do miss thee. I’ve also found a lot of awesome ways to use Greek Yogurt. I’m subbing all kinds of things with it. I love how versatile it is. Especially when it comes to using it instead of sour cream. I honestly can’t say I even notice a difference most of the time. Even if I am eating “smarter” I still need to like the food I’m consuming. I’m not going to be happy eating food that tastes like cardboard. Mmmmm no, no, no. That’s why I was so excited when Hidden Valley asked me to try their new Greek Yogurt Dip Mix. I adore Ranch Dip on anything and everything and the fact that I got to make it with Greek Yogurt was pretty fabulous!

I was so excited that I made a quick trip to Wal-Mart to scout out the new product. It was super easy to find right by all the salad dressings. Plus it had a cute little tag telling me it’s new so it caught my eye right away! I love knowing that the new formulas are specifically optimized to deliver the same great taste when mixed with Greek Yogurt. This formula provides less fat, more protein and lower calories while still delivering your favorite ranch flavor!

I grabbed a few packets along with a few ingredients to make this fabulous Parmesan Chicken and I was on my way home to make a delicious and easy dinner! You all know those are two must haves in my life. This Mom doesn’t have time to be slaving away in the kitchen for hours every night and I bet you don’t either! This recipe comes together quickly and painlessly. First you mix up the dip which is only three ingredients because I added some minced garlic. Love my garlic! Then I breaded the chicken and baked it for 30 minutes. There you have it! A quick and delicious meal for your family! If you have extra dip grab a few carrots and use that dip up for a quick and healthy snack!

Parmesan Chicken with Creamy Garlic Ranch Dip

Ingredients

Instructions

Mix together dip ingredients in a small bowl. Refrigerate until ready to serve.

Preheat oven to 350 degrees.

In a pie plate or shallow bowl combine olive oil and garlic.

In a separate pie plate or shallow bowl combine Panko, Parmesan cheese, basil, smoked paprika and pepper.

Dip each chicken breast in the oil mixture, then in the bread crumbs, coating both sides of chicken breasts. Place chicken breasts on baking rack that has been placed on a baking pan.

Bake for 30 minutes in the preheated oven or until chicken is no longer pink and juices run clean.
