%20about%20chicken%20broth?%20But%20you%20never%20know%20when%20flu%20or%20a%20cold%20will%20attack%20.....or%20just%20a%20rainy,%20gloomy%20day.....and%20nothing%20is%20more%20comforting%20than%20chicken%20soup.%3C/p%3E%3Cp%3EMy%20mother%20taught%20me%20to%20make%20chicken%20broth%20with%20chicken%20feet.%20They%20give%20me%20the%20creeps,%20but%20they%20produce%20an%20amazing%20broth,%20lovely%20in%20color,%20rich%20in%20nutrients%20not%20found%20in%20broth%20made%20just%20from%20a%20chicken%20and%20it%20gels%20just%20as%20a%20good%20broth%20should.%20When%20she'd%20serve%20it,%20she'd%20either%20swish%20in%20a%20beaten%20egg%20or%20make%20dumplings%20with%20an%20egg%20and%20some%20flour.%3C/p%3E%3Cp%3EHence,%20my%20interest%20in%20this%20recipe%20from%20Gabrielle's%20Prune%20cookbook.%3C/p%3E%3Cp%3EI%20always%20have%20chicken%20broth%20at%20the%20ready%20in%20my%20freezer.%20You%20should%20too.%3C/p%3E%3Cp%3EI'm%20not%20going%20post%20the%20recipe%20for%20my%20broth%20because%20I%20already%20blogged%20about%20it%20HERE.%3C/p%3E%3Cp%3E(Not%20capon%20broth%20however.%20Do%20you%20know%20the%20difference%20between%20chicken%20and%20capon?%20D'Artagnan%20has%20a%20great%20explanation...look%20%20HERE.)%3C/p%3E%3Cp%3ESo.%20I%20made%20a%20couple%20changes%20in%20Gabrielle's%20recipe.%20As%20I%20already%20mentioned,%20I%20used%20the%20homemade%20chicken%20broth%20I%20had%20in%20the%20freezer%20rather%20than%20capon%20broth%20AND,%20no%20matter%20what%20Gabrielle%20says,%20it's%20nearly%20impossible%20to%20get%20these%20dumplings%20to%20hold%20together%20without%20a%20bit%20of%20flour,%20so%20I%20added%20just%20a%20tad,%20enough%20to%20keep%20them%20together.%20You%20can%20try%20a%20couple%20without%20and%20see%20if%20you%20have%20better%20luck.%20I%20tried%20four%20or%20five%20and%20while%20they%20did%20result%20in%20dumplings%20of%20a%20sort,%20they%20practically%20disintegrated%20while%20cooking,%20even%20at%20a%20very%20slow%20simmer.%20My%20eggs%20were%20extra%20large,%20so%20perhaps%20that%20was%20too%20much%20moisture;%20next%20time%20I'll%20use%20smaller%20eggs%20and%20see%20if%20it%20works%20better.%20Or%20perhaps%20it%20was%20my%20bread%20crumbs.%20Not%20enough?%3C/p%3E%3Cp%3EWhat%20I%20liked%20was%20the%20addition%20of%20Parmesan%20in%20these%20dumplings%20and%20that%20touch%20of%20nutmeg.%20Just%20those%20flavor%20additions%20made%20them%20way%20different%20than%20my%20mother's.%20The%20dumplings%20were%20lovely%20and%20light,%20no%20doubt%20because%20of%20the%20tiny%20amount%20of%20flour.%20With%20no%20flour,%20they'd%20practically%20melt%20in%20your%20mouth.%20(Well,%20mine%20did%20melt%20in%20the%20saucepan!)%20I%20added%20a%20couple%20pieces%20of%20chicken%20to%20my%20broth,%20whereas%20Gabrielle%20served%20some%20on%20the%20side.%3C/p%3E%3Cp%3EIt%20was%20all%20I%20could%20do%20NOT%20to%20add%20a%20bit%20of%20parsley%20or%20something%20for%20color%20in%20the%20photo,%20but%20decided%20to%20hang%20in%20there%20with%20simplicity,%20because%20that's%20what%20this%20soup%20is%20all%20about.%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3ECombine%20bread%20crumbs,%20Parmesan%20and%20nutmeg.%20Make%20a%20well%20in%20the%20center%20and%20pour%20the%20beaten%20eggs%20in.%20Knead%20everything%20together.%3C/p%3E%3Cp%3EForm%20into%201/2%20inch%20balls.%20It's%20messy.%20Dip%20your%20hand%20repeatedly%20in%20ice%20water%20and%20spray%20your%20hand%20with%20cooking%20spray.%20(I%20used%20a%20small%20ice%20cream%20scoop)%3C/p%3E%3Cp%3EBring%20broth%20to%20a%20boil.%20Drop%20in%20dumplings%20and%20simmer%20for%20a%20few%20minutes%20until%20dumpling%20almost%20double%20their%20size.%20Don't%20boil%20too%20hard%20or%20they%20will%20split.%3C/p%3E%3Cp%3ERetrieve%20dumplings%20with%20slotted%20spoon%20and%20place%20them%20in%20a%20shallow%20bowl.%20Pour%20in%20broth%20about%202/3%20the%20way%20up.%20You%20can%20heat%20up%20a%20slice%20of%20chicken%20in%20some%20leftover%20broth%20and%20serve%20it%20on%20the%20side.This%20recipe%20makes%20about%2012%20smallish%20dumplings.%3C/p%3E%3Cp%3EHere's%20the%20recipe%20straight%20from%20the%20cookbook.%3C/p%3E){kind=link}
