Receta Parsnip Butter Bean Soup
Ingredients
- 1 Cup Butter Beans, soaked overnight
- 1 Tbsp Butter or Olive oil or any cooking oil
- 1 Medium sized Onions, Sliced
- 3-4 no's garlic pod, minced
- 1/2 Pound Parsnips, peeled and chopped
- 1/2 Tbsp Coriander powder
- 1 tsp Cumin powder
- ~ 2 Cups Liquid (Broth / Stock /Water)
- 1/2 Cup Milk or ~1/4 cup cream
- Toasted Breadcrumbs or croutons
- Salt and Pepper, for seasoning
- Parsley for garnishing
Instructions
Pressure cook the beans and keep it aside. Do not discard the water. Cooking the beans separately saves a lot of time.
Heat butter in a saucepan over medium heat. Add the chopped onions and the minced garlic. Saute them until the onions turn translucent. Then add the coriander powder and cumin powder and stir them for a minute.
Then add the chopped parsnips, broth/stock/water and cooked beans or canned beans. Cover and cook for around 20 minutes until the parsnips are tender.
Then allow it to cool and purée it in a blender until it is smooth. Transfer it to the pan again and add the milk, salt and pepper and cook for another 5-10 minutes and finally garnish it with parsley and serve it warm..
