  • 1/2 med Lemon, (1-1/2 Tbsp.) , Juice of
  •     l Tbsp. snipped fresh parsley
  • 3/4 tsp Sugar
  • 3 med Parsnips, peeled and shredded
  • 1 c. Matchstick-size jicama strips
  • 1 Tbsp. Finely minced onion
  • 1 x Unpeeled medium apple, (Delicious preferred)
  • 1/3 c. Golden brown raisins, (optional)

  5. In a large bowl, whisk together lowfat sour cream, lemon juice, parsley, and sugar.
  6. Stir in parsnips, jicama, and onion.
