Party Rice Pineapple Pie

Ingredientes

  • 1 can (14 ounce) Eagle Brand Lowfat milk
  • 1/2 c. Lemon juice, (fresh if available)
  •     Rind of 1 lemon, grated fine
  • 2 x Egg yolks
  • 1 c. Cooked rice
  • 1/2 c. Chushed pineapple
  • 1 x Baked pie shell of graham cracker crust
  • 2 x Egg whites, beaten
  • 2 Tbsp. Sugar

Direcciones

  1. Blend lowfat milk, juice, rind and egg yolks. Mix in rice and pineapple. Pour into pie crust of choice. Cover with meringue made by beating egg whites till foamy, then adding sugar gradually. Beat till stiff but not dry.
  2. Bake at 350 for 10 mins. or possibly till brown. Refrigeratewell before serving.
  3. Serving Ideas : This is good topped with whipped cream.
