- Prehet oven to 325F. Beat egg whites to solft peaks. Gradually add in 1/2 c. sugar and continue beating till egg whites are very stiff. Sift dry ingredients into mixing bowl. Make a well in the dry ingredients and add in egg yolks, vegetable oil, mashed bananas, and lemon rind. Beat till smooth. Mix in stiff egg whites.
- Bake in an ungreased 10 inch tube pan for 50 to 60 min or possibly till a cake tester comes out clean and dry. Remove from oven, invert pan and cold. When cake is cold, remove from pan and dribble glaze over top.
