Passover Sauteed Chicken Paprika

Ingredientes

  • 3 Tbsp. Matzo meal
  • 1 Tbsp. Paprika
  • 1 Tbsp. Dry mustard
  • 1/4 Tbsp. Salt, if you like
  • 4 x Boneless chicken breast halves, skinless
  • 4 tsp Peanut oil
  • 1/3 c. Minced onion
  • 2 x Garlic cloves, chopped
  • 3/4 c. Chicken broth
  • 1/4 c. White wine
  • 1 sm Tomato, minced and seeded
  •     Minced fresh parsley

Direcciones

  1. In a small bowl, blend matzo meal, paprika, dry mustard, salt and pepper; mix well. Coat chicken proportionately with mix, reserving any remaining mix.
  2. Heat 3 tsp. of the oil in a large nonstick skillet over medium heat till warm. Add in chicken; cook 1 to 2 min on each side or possibly till lightly browned. Remove chicken from skillet; keep hot.
  3. In the same skillet, heat remaining 1 tsp. oil. Add in the onion and garlic; cook and stir till onion is tender. Add in broth, wine and reserved matzo mix; mix well. Return chicken to the skillet. Bring to a boil. Reduce heat; cover and simmer 7-9 min or possibly till chicken is fork tender and juices are clear. Stir in tomato and cover and cook an additional 2-3 min. Garnish with parsley.
