%20cook%20like%20me.%20I%20take%20great%20advantage%20of%20my%20kids...the%20fact%20that%20they%20are%20not%20fussy%20eaters,%20I%20could%20feed%20them%20with%20pasta%20for%20lunch%20or%20dinner,%20anytime%20of%20the%20week.%20Sometimes%20it%20could%20be%20a%20'lavish'%20seafood%20marinara%20pasta%20for%20dinner,%20but%20most%20of%20the%20time,%20I%20serve%20them%20fusilli%20with%20meatballs%20in%20tomato%20sauce,%20or%20a%20simple%20plate%20of%20angel%20hair%20with%20bolognese%20sauce.%3C/p%3E%3Cp%3EMy%20boys'%20favourite%20pasta%20meal%20got%20to%20be%20the%20chicken%20and%20mushroom%20spaghetti%20in%20cream%20sauce.%3C/p%3E%3Cp%3EI%20have%20cooked%20this%20pasta%20dish%20using%20various%20methods.%20I%20have%20to%20confess%20that%20during%20those%20early%20days%20when%20I%20first%20started%20cooking%20for%20my%20family,%20I%20used%20canned%20mushroom%20soup%20as%20sauce%20;)%20It%20was%20much%20later%20that%20I%20learned%20from%20some%20cookbook%20the%20proper%20way%20to%20make%20the%20white%20sauce...stir%20fry%20butter%20with%20some%20flour,%20before%20adding%20milk%20or%20cream.%20However,%20I%20could%20never%20achieve%20a%20consistent%20taste.%20Sometimes%20the%20sauce%20would%20be%20way%20too%20thick%20(and%20'floury')%20and%20most%20of%20the%20time%20I%20had%20problem%20trying%20to%20dissolve%20the%20lumps%20of%20butter%20and%20flour%20mixture%20with%20the%20milk.%20If%20the%20sauce%20ended%20up%20too%20thin,%20I%20even%20tried%20adding%20cheese%20slices%20to%20thicken%20it!%20The%20best%20method%20I%20have%20since%20adopted%20is%20to%20simply%20cook%20the%20sauce%20using%20just%20dairy%20cream.%20Depending%20on%20what's%20available,%20I%20may%20use%20heavy%20or%20thickened%20cream%20which%20will%20yield%20a%20very%20creamy%20and%20rich%20sauce,%20but%20I%20prefer%20single%20cream%20(eg%20Nestle%20pouring%20cream)%20which%20is%20lighter%20or%20rather,%20closer%20to%20our%20Asian%20palate.%3C/p%3E%3Cp%3EBesides%20the%20cream,%20the%20other%20important%20ingredient%20for%20this%20dish%20has%20to%20be%20the%20mushrooms.%20There%20is%20a%20vast%20difference%20between%20canned%20mushrooms%20and%20fresh%20button%20mushrooms.%20I%20would%20only%20prepare%20this%20dish%20when%20I%20have%20fresh%20mushrooms.%20Although%20I%20prefer%20the%20more%20earthy%20and%20rich%20flavour%20of%20brown%20button%20mushrooms,%20white%20button%20mushrooms%20are%20just%20as%20great.%20I%20have%20also%20experimented%20using%20a%20mixture%20of%20button%20mushrooms%20and%20fresh%20shiitake.%3C/p%3E%3Cp%3EMost%20cream%20sauce%20recipes%20would%20only%20require%20salt%20and%20pepper%20as%20seasoning.%20I%20am%20not%20sure%20whether%20it%20is%20due%20to%20our%20Chinese%20way%20of%20cooking,%20I%20will%20also%20add%20light%20soya%20sauce.%20I%20know,%20it%20sounds%20like%20a%20weird%20combination,%20using%20soya%20sauce%20in%20a%20western%20dish.%20But%20I%20thoroughly%20enjoy%20that%20split%20seconds%20of%20my%20life,%20when%20my%20kitchen%20is%20perfumed%20with%20this%20savory,%20earthy%20aroma%20that%20is%20released%20the%20moment%20soya%20sauce%20hit%20the%20pan%20of%20sizzling%20mushrooms.%20I%20am%20also%20convinced%20that%20soya%20sauce%20will%20bring%20out%20the%20rich%20flavours%20or%20umami%20of%20the%20mushrooms.%20Yes,%20mushrooms%20are%20capable%20of%20delivering%20plenty%20of%20umami,%20or%20so%20called%20the%205th%20taste.%20So%20that%20is%20why,%20I%20can%20omit%20the%20chicken%20in%20this%20dish%20but%20not%20the%20mushrooms.%3C/p%3E%3Cp%3EThere%20is%20no%20surprise,%20with%20a%20rather%20sparse%20pantry,%20I%20am%20still%20able%20to%20whip%20up%20this%20simple%20everyday%20meal%20thousands%20of%20miles%20away%20from%20home.%20So%20here%20it%20is,%20my%20easy%20pasta%20recipe%20from%20this%20tiny%20kitchen%20in%20Beijing%20to%20yours.%20Bon%20Appetite!%3C/p%3E%3Cp%3ECreamy%20Chicken%20and%20Mushroom%20Spaghetti%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3E(serves%203)%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3E1.%20Bring%20a%20large%20pot%20of%20lightly%20salted%20water%20to%20a%20rolling%20boil%20(I%20use%20only%20about%201%20teaspoon%20for%203%20~%204%20ltrs%20of%20water).%20Add%20pasta%20and%20cook%20for%20about%208%20~%2010%20minutes%20(or%20according%20to%20the%20directions%20on%20the%20package)%20until%20al%20dente.%20Stir%20occasionally%20to%20ensure%20even%20cooking%20and%20to%20prevent%20it%20from%20sticking.%20Check%20occasionally%20to%20see%20if%20it's%20done.%3C/p%3E%3Cp%3E2.%20While%20the%20pasta%20is%20cooking,%20heat%20the%20oil%20in%20a%20large%20frying%20pan%20over%20medium%20heat.%20Add%20garlic,%20stir%20fry%20for%20a%20few%20seconds.%20Add%20chicken%20and%20stir%20fry%20until%20no%20longer%20pink.%20Add%20mushrooms%20to%20the%20pan,%20stir%20in%20soya%20sauce%20and%20saute%20till%20mushrooms%20become%20soft,%20about%201%20~%202%20mins.%20Gradually%20stir%20in%20cream.%20Simmer%20for%20about%205%20mins,%20until%20sauce%20is%20slightly%20thickened%20and%20the%20chicken%20is%20cooked%20through.%20Season%20
