Pasta Salad with Creamy Parmesan Dressing
It isn't very pretty, at least I don't think it is, but it sure is tasty! Right before Memorial Day I purchased the June edition of Food Network Magazine. I loved the photos of all the hotdogs with all the different toppings (even though I won't eat a hotdog!). On our long drive north I went through the magazine several times and decided on a pasta dish that I wanted to try from the Mix & Match Pasta Salad segment. Little did I know I was going to try it sooner rather than later!
My Daughter-in-Law informed me while we were on that visit that she was disappointed I wasn't blogging much and that sometimes she would check my blog a couple times a day to find......nothing new. Aww, well I felt bad! I was slacking! She told me she likes to see what I make and what I think so she can decide if she wants to make it too.
For dinner on Memorial Day she brought the very pasta salad I had been looking at and wanted to try. I guess this time, she taught me something! When I was talking to her about the salad she mentioned that the amount of dressing didn't seem to be enough, so I knew when I made the recipe that I would be doubling the dressing. She also mentioned that it called for a lot of grated Parmesan cheese and that may have dried the dressing out on its own. So, when I made this today I made sure to make some changes to the dressing recipe. Thank you Kristina :) and I'm sorry this is one you have had already, but hey, it was yummy and you let me know that and now I have to make it for us to eat again!
Pasta Salad with Creamy Parmesan Dressing
Food Network Magazine
- 1/2 lb dried pasta (I used Fusilli)
- 1/2 cup sun dried tomato, cut into thin strips
- 2 ears corn, blanched, cold shocked and stripped from cob
- 1 lb asparagus, blanched, cold shocked and cut into bite size pieces
- Dressing:
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 2 tablespoons lemon juice
- 1 large garlic clove, finely grated
- 3/4 cup grated Parmesan cheese
- Salt & Pepper to taste
Cook pasta according to package directions, drain and rinse under cold water. Prep your veggies and mix into pasta. Set aside to combine dressing.
Combine dressing ingredients and fold into pasta mixture. Chill, serve, & enjoy!
