%20that%20my%20kids%20are%20fairly%20picky%20as%20well.%20%20Salmon%20is%20another%20one%20of%20those%20foods%20that%20I%20wouldn't%20have%20touched%2010%20years%20ago%20but%20I%20can't%20get%20enough%20of%20now.%3C/p%3E%3Cp%3ETry%20as%20I%20might,%20I%20don't%20always%20have%20the%20time%20to%20make%20a%20decent%20from%20scratch%20dinner%20with%20my%20full%20time%20afternoon%20chauffeuring%20job%20seeming%20to%20get%20into%20the%20way%20as%20I%20make%20my%20rounds%20in%20Carlsbad%20to%20soccer,%20dance%20and%20surf%20pick%20up%20and%20drop%20offs.%20%20As%20such,%20I'm%20always%20on%20the%20lookout%20for%20an%20item%20that%20helps%20me%20manage%20my%20time%20in%20the%20evenings%20but%20is%20still%20a%20good%20quality,%20and%20tasty%20as%20well.%20%20One%20of%20our%20favorite%20%22go%20to%22%20items%20on%20a%20busy%20night%20is%20Morey's%20Marinated%20Wild%20Salmon%20that%20I%20found%20at%20my%20local%20Costco.%20%20(Morey's%20has%20not%20idea%20that%20I'm%20writing%20anything%20about%20them,%20but%20I%20wanted%20to%20pass%20this%20info%20on%20to%20anyone%20else%20looking%20for%20an%20extraordinarily%20tasty%20wild%20salmon%20that%20is%20ready%20to%20go!).%20%206%20individually%20packaged%20fillets%20per%20box%20wait%20to%20simply%20be%20unwrapped,%20thawed%20and%20cooked.%20%20Easy%20peasy%20on%20a%20weeknight%20without%20much%20time%20for%20cooking.%20%20I%20set%20the%20rice%20on%20to%20cook,%20pop%20the%20fish%20on%20the%20grill,%20toss%20together%20a%20quick%20salad%20and%20we%20have%20dinner%20in%20no%20time!%3C/p%3E%3Cp%3ELast%20night%20after%20driving%20to%20dance%20and%20soccer%20this%20is%20exactly%20what%20I%20did!%20%203%20perfectly%20grilled%20salmon%20fillets%20were%20ready%20for%20dinner%20when%20my%20son%20politely%20informed%20me%20that%20he%20really%20wasn't%20hungry%20as%20he%20had%20made%20himself%20the%20most%20%22amazingly%20awesome%22%20meal...%20all%20from%20the%20freezer!%20%20As%20he%20has%20seen%20me%20do%20so%20many%20times,%20he%20even%20took%20photos%20of%20his%20%22heaven%20on%20a%20plate%22%20(burritos%20and%20mini%20pizzas%20from%20Trader%20Joe's).%3C/p%3E%3Cp%3EFaced%20with%202%20leftover%20fillets%20I%20threw%20together%20a%20Pasta%20Salad%20with%20Salmon%20this%20afternoon%20for%20lunch.%20%20The%20marinated%20salmon%20worked%20wonderfully%20in%20the%20salad%20that%20was%20dressed%20with%20a%20creamy,%20lemon%20spiked%20dressing.%20%20Tossed%20with%20pasta,%20onions,%20peas%20and%20apple%20and%20served%20over%20a%20bed%20of%20greens%20the%20salad%20was%20the%20perfect%20meal,%20not%20from%20the%20freezer.%3C/p%3E%3Cp%3EPasta%20Salad%20with%20Salmon%3C/p%3E%3Cp%3ESalmon%20combines%20with%20a%20creamy,%20lemon%20spiked%20dressing%20for%20a%20quick,%20tasty%20salad%20for%20lunch%20or%20a%20light%20dinner.%3C/p%3E%3Cp%3EIn%20a%20small%20bowl%20combine%20the%20yogurt,%20lemon%20juice%20and%20zest,%20sour%20cream%20and%20salt.%20%20Whisk%20well%20to%20combine.%3C/p%3E%3Cp%3EIn%20a%20larger%20bowl%20combine%20the%20pasta,%20salmon,%20peas,%20onion%20and%20apple.%20%20Stir%20to%20combine.%20%20Add%20enough%20of%20the%20dressing%20to%20coat%20nicely,%20but%20not%20to%20be%20%22drippy%22.%20%20Arrange%20salad%20greens%20on%20a%20plate%20and%20scoop%20pasta%20salad%20over%20the%20top.%20%20Sprinkle%20with%20walnuts%20or%20pepitas%20over%20the%20top%20and%20serve.%3C/p%3E%3Cp%3ERemnants%20from%20one%20happy%20teenage%20boy!%3C/p%3E){kind=link}
