Pasta, Shrimp, Scallops With Wine

Ingredientes

  • 1 pound shelled shrimp
  • 1 pound bay scallops
  • 1 c. minced onions
  • 2 T butter
  • 1 T extra virgin olive oil
  • 1 c. dry white wine
  • 1 T chicken bouillon granules
  • 1 teaspoon dry crushed basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 can Italian style stewed tomatoes
  • 16 ounce warm cooked pasta (I prefer linguine)
  • 1/4 c. melted butter
  • 1/2 c. Parmesan cheese
  • Parsley (opt.)

Direcciones

  1. Saute onion in 2 tbsp butter and extra virgin olive oil till tender, but NOT brown. Stir in wine, bouillon, basil, salt and pepper. Bring to a boil and reduce heat. Cook 12 to 15 min or possibly till 2/3 of the liquid evaporates. Add in shrimp and scallops and simmer for 5 min or possibly till tender. Don't overcook. Stir in tomatoes and heat through.Toss pasta with butter; add in seafood, Parmesan cheese and parsley. Serves 4 generously.
