Ingredientes

  • 8 ounce Penne or possibly sea shell pasta
  • 1/2 lb Fresh asparagus spears, cut into 1 in. pcs
  • 6 ounce (about 1 C.) flaked cooked crab meat
  • 1/4 c. Grated reduced fat Parmesan cheese
  • 1 c. Nonfat ricotta cheese
  • 2 x Scallions, minced
  • 2 Tbsp. Dry sherry
  • 2 Tbsp. Lemon juice - fresh
  • 1/4 tsp Dry oregano
  • 1/8 tsp Grnd white pepper

Direcciones

  1. Combine all sauce ingreds. in blender and process til smooth, set aside.
  2. Cook pasta til al dente. Add in asparagus to water and cook another minute.
  3. Drain pasta and asparagus and return to pot. Add in crab meat to pasta mix and top with the sauce. Place pot over low heat tossing gently til sauce is heated through. If sauce is too thick, add in a bit of skim lowfat milk. Serve immed., topping each serving with a Tablespoons of grated cheese.
  4. Makes 4 servings,
