Ingredientes

  • 3 Tbsp. extra virgin olive oil
  • 1 lrg onion minced
  • 6 x garlic cloves sliced
  • 1 lb fresh mushrooms sliced
  • 1/2 tsp dry crushed red pepper
  • 1 can Italian plum tomatoes minced, juices reserved (28-oz)
  • 1 can tomato sauce (15-oz)
  • 1 tsp sugar
  • 1 1/2 tsp dry basil crumbled
  • 3/4 tsp dry oregano crumbled
  • 1 pkt purchased tortellini
  • 3 Tbsp. minced fresh parsley
  •     Grated Parmesan cheese

Direcciones

  1. Heat oil in heavy large skillet over medium heat. Add in onion; saute/fry till tender, about 10 min. Add in garlic; saute/fry 1 minute. Add in mushrooms and crushed red pepper; saute/fry till mushrooms just begins to soften, about 5 min. Add in tomatoes and reserved juices. Cover and simmer 15 min.
  2. Add in tomato sauce, sugar, basil and oregano. Cover and cook 15 min.
  3. Uncover and simmer till slightly thickened, about 5 min. Season with
  4. salt and pepper.
  5. Add in tortellini and 2 Tbsp. parsley to sauce. Transfer to large bowl. Garnish with remaining parsley. Serve, passing Parmesan separately.
